What is the That’s One Way to do it… Achievement / Trophy in MW3?
The official description for the Achievement reads: Destroy an airborne enemy helicopter with a Mortar Strike. Although no level is specified, you’ll have the easiest time pulling this off in Reactor, the third mission in the game.

For easy access to the Mortar and Helicopter we need, load up the Reactor Mission. For an easier time, I recommend playing on Recruit difficulty.
You have two objectives when you land on the map. First, you need to secure a Mortar Strike. You can find one and a host of other goodies to the northwest of the map (pictured above).
Once you’ve got your Mortar Strike, complete the first part of the mission as usual and destroy the three grounded helicopters. This map is crawling with Konni soldiers, but if you’re playing on the lowest difficulty, it shouldn’t be a big problem.
You can technically try your luck with the Mortar Strike whenever you want, but you’ll trigger a useful checkpoint once all grounded helicopters are destroyed. Once you have the checkpoint, you can try and take out the armored chopper.
You’ll likely miss a few times, but if all grounded targets are destroyed, you can restart with the armored Helicopter already hunting you. You will need to grab the Mortar Strike every time you restart, but it’s better than starting from the beginning of the mission.
The target moves quite erratically, but you can mark the chopper in the air for accuracy. Unfortunately, the strike will miss if the helicopter moves too far, so there’s some trial and error with this Achievement.
